What To Do With Rhubarb When You've Already Made A Pie

Last week we looked at what to do with rhubarb beyond the traditional (yet incredibly delicious) pie, and we asked for your favorite rhubarb recipes. And did you ever send us some good ones!

Stephanie Tickner suggested this recipe for Indian-Spiced Lentils with Spinach and Rhubarb, which she says her family makes each spring. You'll need some ginger, cumin and cilantro, among other items, but you'll find a new blend of flavors between the tart rhubarb, the sweet raisins and the lentils. And since it's got spinach, you don't have to worry about what to make if Popeye should come by for dinner.

Here's another option for using lentils and rhubarb together: Christine Perron recommends this Rhubarb-Lentil Soup, which eschews the Indian-style spices for red onion, carrots and creme fraiche. Nice.

If you're looking for something new but still sweet, try this recipe we learned about from Suzanna Catelli Allison - Rhubarb Banana Crisp. Suzanna describes it as "interesting and tasty" which are always welcome dessert characteristics. 

And if you're in the mood to introduce sweet to savory, how about this Rhubarb-B-Q Sauce we learned about from Cheryl Senter? Rhubarb and brown sugar blend with some onion and vinegar, and your cookout guests will thank you.
