Courtney Haase. After 16 years as a Franciscan nun in New Orleans, Courtney moved to New Hampshire in search of a new vocation. She now runs a small dairy and makes Nunsuch, an award-winning goat cheese. Courtney also founded the Small Dairy Project, on organization that helps other small dairy operators get started.
